Birthday Cake Popcorn – Cinderella Edition!

One might say I have bittersweet feelings towards Cinderella. The bitter: At Disneyland, I was very good friends with Anastasia and Drizella (Cinderella’s evil step sisters), and we ha-a-a-ated Cinderella because she always got the prince.Now on the flip side, I had lots of friends who were very good friends with Cinderella and they became some of my favorite people in this world!
When my best friend told me her four-year-old daughter, Aaliyah, was having a Cinderella-themed birthday party, I was so excited, simply becauseI love princesses and I have the perfect party treat for any birthday party – birthday cake popcorn! But this time, I would add a little bit of Cinderella blue to decorate the popcorn.
Plus, I decided I would make Fairy Godmother’s wands, AKA chocolate covered pretzel rods, and I’d make a few princess-themed cupcakes!
Birthday cake popcorn is a sweet take on salty popcorn. I like to take buttered popcorn and cover each kernel with a white chocolate and cake batter mixture. Then top with various nonpareils or sprinkles!
This is such an easy treat to make at home. It’s fun to make with little kiddos, too! Allowing the kids to be creative with this dessert is the absolute best.
All you need is a little bit of bippity-boppity-boo and a solid 15 minutes (this includes hardening time) and you’ll be good to go with a full tub of birthday cake popcorn, perfect for any occasion!
If you don’t have any blue food coloring, don’t you fret! Sprinkles make everything better, even if you keep the color white. Check out the pic above and you can see that the popcorn is still loads of fun!
Birthday Cake Popcorn – Cinderella Edition!
Ingredients
- 6 cups popcorn
- 1 cup white chocolate candy melts
- 1 1/2 cup cake mix
- sprinkles / nonpareils
- blue food coloring
Equipment:
- baking pan
- parchment paper
- wooden spatulas
Instructions
- Line a baking sheet with parchment paper. Move to the side.
- Pop popcorn according to microwave directions. Pour popcorn into large bowl. Remove as many unpopped popcorn kernels as possible.
- Microwave white chocolate in 30 second increments on half power until fully melted.
- Add cake mix and mix until well combined.
- Add one drop of food coloring. Mix.
- Scoop white chocolate/cake mix mixture over popcorn. Use spatulas to coat each popcorn with the mixture.
- Pour popcorn onto parchment-lined baking sheet.
- Use spatulas to spread popcorn to one layer.
- Sprinkle with various nonpareils.
- Let white chocolate mixture harden completely (may place in fridge to harden if necessary).
- Use hands to break apart the popcorn pieces.
