S’mores Cups

IMG_3456S’mores simply scream summertime. They’re one of my favorite treats because they always remind me of summertime, camping, bonfires, friends, laughing, great weather, yummy snacks, and pure happiness. And even though summer is right around the corner, I couldn’t wait to make PLB’s version of a s’more.

IMG_3460Lately, I’ve been hooked on peanut butter… I’m telling you, I’ve brought the container of peanut butter and a spoon over to the couch, turned on Scandal, and started stuffing my face. My man had to come over and literally pry the PB out from my hands. ? Nobody gets between me and my PB!

So this week, I knew I just had to incorporate some sort of peanut butter thing in the recipe. And that “thing” are none other than my favorite- Reese’s Peanut Butter Cups. This PLB twist on the typical s’more simply swaps out a chocolate bar for a Reese’s cup and let me tell you, the result is mind-blowing.IMG_3459

With Reese’s PB cups, you still get that chocolate flavor but the peanut butter takes this s’mores cup to a whole other level.

And the crust on these cups are unbelievable. Perhaps one of the best crusts I’ve ever had (don’t tell momma!) and the funny thing is, the crust recipe only calls for three ingredients, WHAT.

With s’mores cups, because we’re working with mini marshmallows (or regular marshmallows cut in half), you can put as many marshmallows as you want on top. For those of you who may not favor marshmallows, you don’t have to use very many! And depending on how you like your marshmallow roasted, you can put the s’mores cups under the broiler for as long or as little as you’d like.IMG_3454

For me, whenever I make s’mores, I LOVE burning my marshmallows. I always like catching it on fire and then sandwiching it in between the two Graham crackers and chocolate. (Anyone else? Just me? Cool WINK FACE EMOJI) The burnt flavor gives s’mores a little bit different taste, don’t you think? Luckily, these s’mores cups are made however you prefer!

Using only FIVE ingredients, this has to be one of my favorite PLB recipes to date (and everyone I know who’ve tried these s’mores cups rave about them)! Let me know what you think of these Reese’s s’mores cups! Enjoy!

S’mores Cups

Ingredients

  • 1 cup finely crushed graham crackers (about 7 graham crackers)
  • 6 tablespoons melted unsalted butter
  • ¼ cup powdered sugar
  • Few dozen mini marshmallows
  • 24 Reese’s Peanut Butter Cups Miniatures (unwrapped)

Equipment:

  • 24 count mini cupcake pan
  • Medium size bowl
  • Spoon
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease mini cupcake pan with cooking spray.
  3. In a medium bowl, mix graham cracker crumbs, powdered sugar, and melted butter with a spoon.
  4. Evenly distribute the mixture into each cup of the 24 count cupcake pan, making a firm indentation in the center so it looks like a cup.
  5. Place mini cupcake pan in oven for 5 minutes.
  6. While the crust is baking, gather Reese’s Peanut Butter Cups Miniatures and mini marshmallows.
  7. Remove from oven and turn oven to broil.
  8. Place one Reese’s Miniature right side up so it fits in the graham cracker cup. Top it off with as many mini marshmallows as you’d like (I do between 4-6). Repeat with remaining cups.
  9. Place cupcake pan back in the oven for about two minutes. Keep an eye on the s’mores cups. Remove pan once the marshmallows begin to brown on top.
  10. Leave s’mores cups in mini cupcake pan for about an hour.
  11. Once cooled to room temperature, use a butter knife or the opposite end of a spoon to wedge around and under each s’mores cup and transfer to a plate and indulge!
