Stand by for battle, we’re about to make Poké Ball cookies!

By now the whole world has heard of Pokémon Go. It’s quickly become the biggest mobile game in U.S. history.pokemon-go-gif

Perhaps you’re not playing Pokémon Go, but I’m sure you know what Pokémon is! It was a game made popular in the late 90s/early 2000s.

I used to play it all the time in elementary school. Of course I loved me some Jigglypuff, she was the cute little pink ball and had the prettiest eyes! jigglypuff

On a family vacation to Hawaii in the third grade, I stumbled upon a Pokémon convention. I was so hopeful that I would end up trading some of my Pokémon cards for something great! And that’s exactly what happened. I traded a few of my cards for a Venasaur, the final stage of evolution of the cute little Bulbasaur. I was so excited! I used my hotel phone to call my friend back home to tell her the good news! Immediately after I told her about Venasaur, she told me she traded a few of her cards for a Charizard (the final stage of Charmander). I can’t begin to tell you how jealous I was. Charizard is a freaking dragon!!! I wanted a Charizard so badly. This was the first time I was taught to be happy for other people’s successes, regardless of how envious I am. #lessonlearned #thanksmomma

IMG_6274Now that Pokémon has made a major comeback, I can’t help but want to be a little kiddo again. Those were the days! But now I have to pay bills, nap time isn’t a thing anymore, and what on earth is “free time??” Adulting is so much fun!! cue the sarcasm

I’m only kidding. This thing called life is truly a blast. And we’re going to continue the fun by heading into the kitchen to make these Pokémon Poké Ball cookies! They’re decorated on a chocolate chip shortbread cookie, and this so happens to be my favorite shortbread cookie recipe to date. It’s so stinkin’ easy!

I absolutely love the taste of these shortbread cookies but they’re so much yummier when they’re decorated as Poké Ball! The rich, sweet flavor of the royal icing just blows this cookie outta the water.

Poké Ball Cookies

Ingredients

  • INGREDIENTS:

For the CHOCOLATE CHIP SHORTBREAD COOKIES:

  • 1 cup unsalted butter (room temp)
  • 1/3 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 1 1/2 cups semi-sweet mini chocolate chips

For the DECORATING:

  • 2 tablespoons meringue powder
  • 1/4 cup warm water (may need more for a smoother consistency)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla
  • Red food coloring
  • Black food coloring

EQUIPMENT:

  • Stand mixture (with both the whisk and paddle attachments)
  • Spatula
  • Decorating bags
  • Number 3 tip
  • Wax (or parchment) paper
  • Baking sheet
  • Rolling pin
  • Circle cookie cutter

Instructions

  1. DIRECTIONS:
  2. In the stand mixer with the paddle attachment, mix together unsalted butter and both sugars on medium speed until it becomes light and fluffy.
  3. Scrape down sides of mixer with spatula.
  4. Add egg yolk and vanilla. Mix on medium speed.
  5. Slowly add salt and flour on low speed until just combined.
  6. Transfer dough to cutting board and knead in mini chocolate chips.
  7. Place dough in between two sheets of wax paper and roll out until dough is about 1/4 inch thick.
  8. Place in fridge for a few hours or up to 30 minutes in the freezer.
  9. Preheat oven to 350 degrees and line baking sheet with wax (or parchment) paper. Set aside.
  10. Use circle cookie cutter to cut cookies. Place on baking sheet 2 inches apart.
  11. Bake cookies for 10 minutes or until the edges are golden brown. Let cookies cool on baking rack.
  12. To make royal icing, combing meringue powder, warm water, powdered sugar, and vanilla in the stand mixer using the whisk attachment on low until icing peaks form. If consistency needs to be thinner, slowly add small amounts of warm water and mix until icing is shiny and thin.
  13. Separate icing into three different bowls. Drop several drops of red food dye in one bowl and mix until completely red. Repeat with another bowl of icing and the black food dye.
  14. Scoop a small amount of white icing into a decorating bag with a number 3 tip.
  15. Begin piping the lower half of the cookie. Use a toothpick to evenly distribute the white icing.
  16. Repeat with the red icing and decorate the top part of the cookie.
  17. Repeat with the black icing and add a thin line in between the red and the white icing.
  18. Allow black icing to become stiff.
  19. Add a white dot in the center of the poké ball cookie.
