I’ve been obsessed with making homemade toffee for the last three months, I can’t believe it’s taken me this long to write this post! #ShameOnYouKell

But then I started making it for other occasions, my favorite being “let’s make a dessert really fast so we can sit down and watch the new episode of ‘How To Get Away With Murder.’” 

Yeah, it’s safe to say I’m obsessed with this dessert. It’s become my new go-to dessert. The saltine crackers add the perfect amount of salt, and the brown sugar/butter mixture creates the greatest buttery-caramelly crunch.

This homemade toffee only requires five ingredients – saltine crackers, butter, brown sugar, semi-sweet chocolate chips, and chopped almonds.

It’s so stinkin’ easy, it’s not even fair. And most importantly, it’s such a hit with everyone! I’ve never had someone dislike this toffee (and it’s super fun too because most people are shocked to find out there are saltine crackers involved in this beautiful creation).

First things first, line a baking pan with parchment paper and lay down saltine crackers in an even layer.

Then you’ll mix the butter and brown sugar in a saucepan, bring it to a boil, and stir for three minutes. This is what creates the “hard crack” stage of the toffee!

Next you’ll pour the caramelly mixture over the saltine crackers, and place the entire pan in the oven for 7 minutes at 350 degrees.IMG_C030E9D28898-1

Once it’s out of the oven, spread semi-sweet chocolate chips on top. And for the final touches, you’ll sprinkle some almonds over the top. Finally, place in the fridge for about 1 hour (or the freezer for about 20 minutes), break into pieces, and enjoy!

Saltine Toffee

Ingredients

Ingredients

  • 2/3-1 sleeve of saltine crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 1/2 cups semi-sweet chocolate chips
  • 3/4 cup chopped almonds (or pecans)

Equipment

  • medium sized cookie sheet
  • medium sized sauce pan
  • aluminum foil
  • spatula
  • knife

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a medium sized cookie sheet with aluminum foil.
  3. Place the saltine crackers out on the cookie sheet until the foil is completely covered. Crackers may need to be broken in half to cover the entire cookie sheet.
  4. Melt the butter in a medium sized sauce pan on medium heat until completely melted.
  5. Add the brown sugar and stir until it begins to sizzle.
  6. Start the timer for 3 minutes, stirring constantly.
  7. Pour the bubbly mixture evenly over the saltine crackers. Use the spatula to spread the mixture over any areas that may have been missed.
  8. Bake at 350 degrees for 7 minutes.
  9. Quickly remove cookie sheet from the oven and sprinkle the chocolate chips evenly on top.
  10. Place the cookie sheet back into the oven for another 1-2 minutes to let the chocolate chips melt completely.
  11. Use the spatula to spread the melted chocolate chips evenly over the caramelized mixture.
  12. Sprinkle almonds (or pecans) on top of chocolate.
  13. Place in refrigerator for 2 hours or in the freezer for 30 minutes.
  14. Use a knife to break the toffee apart.
  15. Bon appetit!
