Fall is in full swing. Whether we’re talkin’ pumpkin spice lattes, planning out your Black Friday shopping, or curling up and watching your fave fall shows in yoga pants and Uggs, we’ve officially entered the most wonderful time of the year. We’re focusing today’s dessert on the next major holiday-Thanksgiving… the holiday where we all end up in a food coma and passing out at 8pm from having such full tummies. Okay, so what if we stuff our faces with delicious carbs and turkey?! We all need that sweet dessert post-meal to wrap up our Thanksgiving dinner perfectly. #amiright

Instead of grabbing a sliver of a piece of pumpkin or pecan pie, we’re going for the mini, bite-sized pumpkin pies this Thanksgiving! 

This recipe for mini pumpkin pies only requires 7 ingredients total, one being pie crust and the other being whipped cream. The other five ingredients are for the pumpkin filling.

Mini Pumpkin Pie Bites

Mini Pumpkin Pie Bites

Ingredients

  • 1 15oz. can pumpkin puree
  • 1 tbsp pumpkin pie spice
  • 1 can sweetened condensed milk
  • 1/4 tsp salt
  • 2 eggs
  • one sheet pie dough
  • whipped cream

Instructions

  1. Preheat oven to 425 degrees. Spray mini muffin tins with baking/cooking oil. Set aside.
  2. In a large bowl, combine pumpkin puree and pumpkin pie spice and mix until combined.
  3. Add sweetened condensed milk, salt, and eggs into pumpkin mixture. Whisk together completely.
  4. Roll out pie crust dough.
  5. Using a 1.5 inch cookie cutter (in the shape of a flower or a circle), cut the pie dough. Re-roll pie dough to cut out more shapes of dough.
  6. Gently push the dough into each mini muffin tin. Use enough pressure to push the dough against the walls of each muffin tin.
  7. Pour the pumpkin mixture into each mini muffin tin lined with dough, about 3/4 high. The pumpkin mixture will rise while baking, so make sure it doesn’t overflow!
  8. Bake for 10 minutes. Lower heat to 350 and bake for another 10 minutes.
  9. Remove pan from oven and let cool for 30 minutes.
  10. Remove each mini pumpkin pie from the individual muffin tins. Top with whipped cream and serve!
